Edamame Chicken Stir-Fry: 2014 Rice Expo cooks up true Arkansas products

STUTTGART, Ark. – Love edamame, but don’t know what to do with it? The 2014 Arkansas Rice Expo has the answer.
This year’s Rice Expo is set for Friday, Aug. 1, at the Grand Prairie Center, 2807 Highway 165 South, in Stuttgart.
The expo will feature a cooking demonstration of this year’s signature dish, Edamame Chicken Stir-Fry, which is made from rice, chicken, edamame, broccoli and carrots.
The dish is chosen because “all of the ingredients can be grown in Arkansas,” said Leigh Ann Bullington, Cross County extension agent for the University of Arkansas System of Agriculture. That’s why this dish is special, she said.
Edamame Chicken Stir-Fry is also healthy and delicious.
“We want attendees to learn that rice fits in a healthy diet,” said Bullington, who will be doing the demonstration.
Although it sounds fancy, it only takes 10 to 15 minutes to prepare, once rice is cooked, she said.
What’s cooking at the expo?
Edamame Chicken Stir-Fry cooking demonstration is at 8:30 a.m.
Two other healthy and delicious dishes will also be demonstrated at the Rice Expo. Garlic Herb Spread cooking demonstration will be at 10 a.m. by presenter VeEtta Simmons followed by a demonstration of Ambrosia Rice by Dana Kelly at 11 a.m.
All three dishes highlight different main ingredients, which are vegetables, herb or fruit.
Living Well with Rice Cooking Demonstrations will be at Salon B Stage 1, which is different from last year.
In another stage, three horticulture seminars on vegetable production, fruit production, and herb production will also take place.
The best rice recipe contestants from around the state will also be presenting their dishes in the Rice Recipe Contest. The first-place winner’s recipe will be featured at next year’s Rice Expo cookbook.
Youths can also enjoy a passport adventure and science, technology, engineering and math activities presented by Arkansas 4-H.
