Good Morning Arkansas Recipes - Fresh Strawberry Pie
4 cups fresh strawberries (sliced)
1 baked 9-inch pie shell (cooled)
1 ½ cup water
3/4 cup sugar
2 tablespoons cornstarch
1 (3-ounce) package strawberry gelatin
1 cup whipped topping
Arrange berries in pie shell. Combine water, sugar, cornstarch in pan. Mix
until smooth. Cook over medium heat, stirring constantly until mixture comes to
a boil. Cook 2 minutes longer or until mixture is clear and thick. Add gelatin.
Stir until dissolved. Pour while hot over strawberries. Chill until firm and
serve with whipped toping.
Note: If you are trying to cut back on sugar in your diet you can reduce the
sugar in this recipe to a 1/2 cup instead of 3/4 cup depending on how sweet the
strawberries are. Also you can use the sugar free strawberry gelatin instead of
the regular gelatin. This recipe is delicious even if you reduce the sugar.
