Knowledge is the Key for Living with Diabetes
Fulton County diets are low in fruits, vegetables, and whole grains with too
much fat. Heart disease is a number one killer. The incidence of diabetes is
increasing and the majority of citizens express concerns with their weight.
The Extension Service and EH Council sponsored three workshops for the
general public. Emphasis was on healthy diabetic recipes and cooking techniques.
Participants took pre and post tests. Of the respondents, 90% indicated they had
used class recipes or modified their own recipes to reduce fat, sodium or sugar;
58% reported they were walking two or more miles per week; and 30% indicated
they had reduced their weight. Reducing fat, sugar and sodium and increasing
exercise are key components to a healthy life.
According to the American Dietetic Association, nutrition intervention saves
an average of $8000 per patient in future health costs. Thus for the small group
surveyed there was a potential savings of $280,000 in health costs.
Additional workshops will be taught another year due to the interest of
participants.
The FCS agent was interviewed by the Rural Arkansas Cooperative Publisher who
published a special section on recipes for the diabetic. Calls were received
from all across the state regarding the Right-Bite Seminars.

Impacts
- The Right-Bite Cooking School was held with 37 participants.
- Distributed fact sheets on food labels, meal planning, and food safety
to 386 clients through the Family Nutrition Education Program.
- Two Tri-County Day Care Provider Workshops were held with 18 day care
providers attending.
- Monthly leader training was conducted for the Extension Homemakers
Clubs.
- Fulton County EHC received 1st place at state for outstanding
accomplishments in the promotion of their cemetery record book.
- Preventing Medicare Fraud was presented to 100 senior citizens.
- Several youth programs were taught including Character Counts, Kids and
Cash, and On Your Own at Home.
