Four of the leading causes of death in Arkansas are related to diet. They are heart disease, cancer, stroke and diabetes. Cardiovascular disease is the leading cause of death in the U.S. and Arkansas and the Diabetic rate in Arkansas is the 5th in the U.S. Learning to "build a healthier lifestyle" was the main objective of the diabetic and heart smart educational classes conducted in Crittenden County. Three sessions of "Right Bite" and one session of Heart Smart was conducted, reaching 100 participants. As a result of these programs, 75% of the participants are monitoring their blood glucose regularly, 75% are eating more fruits and vegetables, and baking more chicken and fish instead of frying.

"Right Bite", The Cooking School for People with Diabetes and Those Who Love Them and Heart Smart were conducted to assist clientele in selecting and preparing foods that are low in sugar, sodium and fat. The Cooperative Extension Service offered other "Building a Healthier Lifestyle" type programs through our Family Nutrition Education Program (FNEP).

Impacts

  • 75% of the Right Bite participants are monitoring their blood glucose regularly.
     
  • 75% of the participants are using sugar substitutes to prepare desserts.
     
  • 50% of the participants are baking or grilling chicken and fish instead of frying.
     
  • 80% of the participants are reading food labels.
     
  • 90% of the participants are eating more fruits and vegetables.
     
  • 30% of the participants including more exercise.
