2008 Miss Arkansas County Rice
Colbie P. was crowned the "2008 Miss Arkansas
County Rice". Colbie is the daughter of Bill and Cindy P. of
Humphrey. Her rice dish is "Cuban Rice".
Colbie will make appearances in the county,
promoting the use of rice by preparing her dish for various clubs
and organizations. A state contest will be held in November, and
promotional activities are a large part of judging. The purpose of
the contest is to promote interest in rice cookery and rice
promotion among the youth in the rice producing areas of Arkansas
and to focus the attention of the general public of Arkansas on the
importance of the rice industry to the economy of our state.

Nadia Y., 2007 Miss Arkansas County Rice was
present to crown Colbie. A "Miss Arkansas County Rice" sash, tiara,
rice pendant, $100 cash and a gift basket were presented by the
Extension Homemakers (EH) Rice Promotion Committee, which is made up
of members of Prairie Gems EH Club.
As Miss Arkansas County Rice, Colbie will
receive: printing of recipe cards from Arkansas County Bank, rice
and rice cooker from Cormier Rice Milling Company, Inc., free
setting and photo from Relyea Photography; and $300 spending
allowance to be spent on promotional activities from the Committee.

Cuban Rice
Ingredients
1 - 15 oz. can sliced pineapple
1 Tbsp. olive oil
1 cup uncooked rice
1 ½ cup cooked ham, coarsely chopped
1 bell pepper, sliced or chopped
1 Jalapeno pepper, finely chopped
1 small onion, sliced
¾ cup black beans
Lime wedges
Salt and pepper to taste
Preparation
1. Cook rice according to package directions.
2. Heat oil in skillet; drain pineapple slices, reserving
juice, and brown on both sides. Divide between 4 plates.
3. Meanwhile, add ham, bell pepper, jalapeno and onion to
skillet; Sauté for about three minutes stirring
occasionally. Add beans, rice and reserved pineapple juice.
Heat until the juice has disappeared. Divide between plates.
May garnish with lime wedges.
