Good Morning Arkansas Recipes - Spinach Stuffed Baked Potatoes

6 baking potatoes
1/4 cup lite sour cream
1/4 cup silken soft tofu
1 10-ounce package frozen spinach, thawed and drained
1/4 cup green onion
1/4 teaspoon pepper
sprinkle of garlic and onion seasoning
1/2 cup grated low-fat cheddar or part-skim mozzarella cheese

Thoroughly wash and bake 6 potatoes until they are tender or easily pierced with a fork. Let cool and scoop out potato into a bowl. Mix sour cream, tofu, drained spinach, green onion, pepper and cheese. Add potatoes to the mixture and blend well. Stuff potatoes. Sprinkle with garlic and onion seasoning. Bake at 350 degrees Fahrenheit for approximately 20 to 25 minutes or until brown.
