Good Morning Arkansas Recipes - Rice Custard and Lemon SauceRice
Custard
1/2 cup rice
2 cups milk
1/4 cup butter
3 eggs
3/4 cup sugar
1 tsp. vanilla
1/4 tsp. salt
2 cups milk
1/2 tsp. nutmeg or cinnamon
Cook rice in 2 cups milk in top of double boiler until rice is tender. Add
butter. Beat together eggs, sugar, vanilla, salt, and 2 cups milk. Add hot rice
mixture and mix well. Pour into greased 2 quart casserole dish. Sprinkle with
nutmeg or cinnamon. Bake in 350 degree oven for 50 minutes or until middle is
done.
Old Fashioned Lemon Sauce
1/2 cup butter
1/4 cup water
3 tbsp. Lemon juice
1 cup sugar
1 egg well beaten
Combine all ingredients. Cook over medium heat, stirring constantly until
boiling. Serve warm. Maybe refrigerated and reheated. Yields 1 1/3 cups.
Wonderful over cooked rice, bread pudding, pound cake, etc.
