Good Morning Arkansas Recipes - Hot Salsa and Mex Rice Dip
Mex-Rice Dip
3 cups cooked rice
1 pound pork sausage, cooked and drained*
1 1.5 ounce package taco seasoning mix
1 12 ounce can diced tomatoes and peppers
1 12 1/4 ounce can tomato soup
1 pound Process Cheese, cubed
1/2 cup water (optional)
Garnish: Jalapeno peppers
Combine pork sausage, taco seasoning, diced tomatoes and peppers, tomato soup
and cheese in a large saucepan. Cook over low heat, stirring occasionally, until
cheese melts. Add rice. Add water if needed to make desired consistency.
Serve warm with chips or crackers.
*Ground beef may be substituted.
Hot Salsa
4-6 Jalapeno peppers
1/2 cup of water (for steaming peppers)
4 whole tomatoes or 15 oz. can tomatoes
1 small onion
1/2 tsp. Salt
1/4 cup fresh cilantro, chopped (optional)
Steam peppers in water until soft. Cool. Cut tomatoes in quarters (or open
canned tomatoes). Put peppers, tomatoes and their juice in blender for about 10
seconds. (If not using a blender, chop peppers and tomatoes into small pieces
and mix together.) Add chopped onion and salt to taste. Add ¼ cup chopped fresh
cilantro (optional).
