Good Morning Arkansas Recipes - Chicken-Cornbread Casserole
4 cups cornbread, crumbled
1 can (10 3/4-ounce) fat free condensed cream of chicken soup
1/4 cup onion, chopped
1/4 cup celery, chopped
1 1/2 cups cooked chicken coarsely chopped
1 1/2 cups light chicken broth
Combine cornbread, onion, and celery, and mix well. Place half of mixture
in a 2-quart baking dish. Spread chicken over cornbread layer.
Combine soup and chicken broth, pour over chicken. Place remaining
cornbread mixture over chicken, press mixture down. Set aside 20 minutes.
Bake at 350 degrees for 45 minutes. Serves 8 to 10.
Optional: sage (to taste)
Note: Freeze left-overs in meal-sized portions. Defrost in refrigerator.
